With each vintage, varietal batches are selected for Grandfather. These batches are individually aged in seasoned old oak casks before being blended together at 14 years of age. This blend is then introduced into the 'Grandfather Solera'. This Solera consists of six stages that are designed to fully integrate all components offering consistency and freshness with a final minimum average blended age of 20 years. Deep amber/mahogany in colour with green-gold tinges, this is a blend of the finest old tawnies. The palate shows classical Penfolds fruitcake, liquorice and vanillin oak flavours with a sweet full and round mid-palate, and a finish that persists on and on.

There is a complex assortment of flavours vying for attention. Hazelnuts, macadamia, white chocolate, and Dutch liquorice are first noted. There is a lovely fruit saturation, reminiscent of Kir Royale cocktail, summer berry pudding, and melted chocolate. The tannins are ripe, fully integrated, and effortlessly anchor the fruit. A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

The palate is rich, round, and textural, delivering juicy flavours of ripe raspberries, satsuma plums, and red currants, supported by fine cocoa-powder tannins for a soft, mouth-filling finish.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.
